Limes – The Little Green Citrus that Packs a Punch

With summer just around the corner, it’s time to start thinking about short-cutting any time inside so we can enjoy the warm, sunny days outside. One of the major time hogs are meals; planning, shopping, preparing and mixing in variety all come into play. Eating a plant-based diet makes all of these chores that much easier any day of the week and with all the different veggies at hand, creating unique salads just got easier. The last tidbit to be aware of is the dressing. Ah, be careful here for it’s easy to grab a bottle and use too much. Instead, reach for a lime and give it a squeeze. There’s nothing better (or easier) to bring out all the yummy flavors and give it some zing!

You may not be aware but those little greens dudes pack a punch of nutrients and goodness in their tight green peel ‘wrapper’. Not only do they contain a little bit of protein and fiber, but they also give a hit of Vitamin C – THE antioxidant from nature. Fortunately for us, they are in season from May through October so there is no excuse not to use them.

There’s nothing prettier than creating a large, dark leafy green salad chock full of veggies and maybe a handful of sunflower seeds, topped off with a squeeze from a lime, served al fresco with an ice-cold pitcher of high alkaline water. Living food is the only choice when it comes to health and longevity. Maybe host a vegan dinner party to get everyone started on the right foot. Your centerpiece can be a big, bowl of those little green dudes. How’s that for easy?
